Chicken Marsala Recipe – A Family Favorite

Wine Pairing for this Chicken Marsala recipe: A California Pinot Noir would be the perfect pairing for Chicken Marsala. Cambria Julia’s Vineyard Pinot Noir would be a terrific choice. This is a dry, silky Pinot Noir with flavors of black cherry and raspberries and hints of cinnamon and vanilla. The velvety texture is a delight. Other Pinot Noirs to consider that would also be great include Giant Steps Sexton Vineyard Pinot Noir from Yarra Valley, Australia and Lincourt Lindsay’s Pinot Noir from California’s Central Coast.

Ingredients for Chicken Marsala:

4 boneless skinless chicken breasts
Kosher salt
Fresh ground pepper
1/2 cup olive oil
3 slices chopped bacon
8 ounces mushrooms
1/2 cup sweet Marsala wine
1/2 cup Swansons chicken broth
2 T butter
1/2 cup chopped Italian parsley
1 clove minced garlic
Fresh sliced or shaved mozzarella cheese

Instructions for Chicken Marsala:

1. Flatten chicken breasts by covering with plastic wrap and pounding with a meat mallet until they are only about 1/4 inch thick.
2. Put 1/2 cup of flour in a small bowl. Season with salt and pepper.
3. Heat the olive oil in a frying pan until the oil is hot.
4. Coat both sides of the chicken pieces with flour, shaking the excess off into the bowl.
5. Fry the chicken in the hot oil for 3-4 minutes on each side until golden brown.
6. Lower the heat to medium, fry bacon pieces in frying pan for a few minutes.
7. Add mushrooms and minced garlic and saute for approximately 5 minutes until brown and moisture has evaporated.
8. Season with salt and pepper.
9. Add Marsala to the pan and cook for 30-60 seconds to cook out the alcohol.
10. Add the chicken stock and simmer for 1 minute.
11. Add the butter. Place chicken back into the pan.
12. Simmer mixture to heat the chicken.
13. Season with salt and pepper. Top with chopped parsley.
14. Serve with fresh sliced or shaved mozzarella cheese.

    Our Favorite Beef Stroganoff Recipe

    Beef Stroganoff

    Cheers-2-Wine is pleased to bring you our favorite beef stroganoff recipe. This delicious beef stroganoff makes a delightful meal for four. This is a hearty meal that is a family favorite. Serve with roasted asparagus and garlic bread for a complete meal.

    During the summer our “go to” dessert to accompany this dish is Chocolate Covered Strawberries. Easy to make and a treat for all!

    Wine Pairing

    Pinot Noir is always a good wine choice to go with a dish rich with mushrooms. Drink the same wine that you use in preparing the stuffed mushrooms to serve with the dish. If you can find it, Zorzal Gran Terroir Pinot Noir from Argentina would be an excellent pairing. Wines from Chiles offer some of the best bargains for Pinot Noir. This delicious wine sells for less than $20.

    Another excellent Pinot Noir (and easier to find) is Eyrie Pinot Noir Estate from the Williamette Valley of Oregon. This is an elegant Pinot Noir with marvelous flavors of blackberry and spice that will only make the mushrooms taste even better. I sometimes see this Pinot for sell in the grocery store. I’d suggest your own favorite Pinot Noir…or whatever wine you love to drink!

    Ingredients for Beef Stroganoff Recipe:

    12 ounces wide egg noodles
    1 pound beef sirloin
    3 tablespoons olive oil
    3/4 cup finely chopped onion
    1 1/2 teaspoons minced garlic
    3/4 pound mushrooms, sliced
    3/4 cup Pinot Noir
    3 tablespoons cognac
    2 tablespoons prepared oyster sauce
    1 1/2 cups whipping cream
    1 1/2 teaspoons cornstarch
    6 tablespoons sour cream
    Salt and pepper to taste

    Instructions for Beef Stroganoff

    1. Bring 3 quarts of water to a boil. Add noodles, return to a boil, and cook until tender 5 to 7 minutes. Drain and pour into a large serving bowl.
    2. Rinse beef and pat dry. Cut meat into 1/8-inch-thick slices.
    3. Add 1 tablespoon olive oil and beef into a 12-inch frying pan and cook over medium-high heat. Cook for 2 to 3 minutes to brown. Pour into another bowl.
    4. Add remaining 2 tablespoons olive oil to pan. Cook onion and garlic and stir for 3 to 5 minutes. Add mushrooms and brown 3 to 5 minutes.
    5. Add wine, cognac, and oyster sauce to mushroom mixture. Bring to a boil over high heat, then reduce heat and simmer to blend flavors, about 5 minutes.
    6. Add cream and return to a simmer. In a small bowl, mix cornstarch with 1 tablespoon cold water until smooth. Add to mushroom mixture and stir until it boils and thickens, about 2 minutes.
    7. Add sour cream and beef and heat for about 1 minute. Add salt and pepper to taste.
    8. Cover with a lid and keep warm on the stove until ready to serve.
    8. Pour beef over hot noodles or your favorite rice.

    What to Serve With This Delicious Beef Stroganoff

    I’d serve this dish with your favorite salad and whatever type of bread you favor. It’s a hearty dish that doesn’t require huge side dishes. Select a dessert that you really savor to end the meal. As a chocolate lover, I’d probably go with something like a Chocolate Mousse Cake or Chocolate Covered Strawberries.     Ingredients for minestrone:
    1 pound hot Italian sausage
    1 pound mild Italian sausage
    1 chopped onion
    3 carrots, chopped
    1 zucchini, sliced
    4 cloves garlic, chopped
    3 quarts chicken broth
    2 cans diced tomatoes
    2 cans cannelloni beans, rinsed and drained
    1 tablespoon dried basil
    ¼ cup Zinfandel
    2 cups large shell-shaped pasta

    4. Add pasta. Reduce heat and simmer, covered, for about 10 minutes until pasta is tender.

    Ingredients for Red Velvet Cake Recipe:
    1 package fudge marble cake mix
    1 teaspoon baking soda
    1 1/2 cup buttermilk
    2 large eggs
    1 ounce red food coloring
    1 teaspoon vanilla

    Instructions for Cake:
    1. Preheat oven to 350 degrees. Grease and flour two 9-inch round cake pans.
    1. Stir the baking soda and cake mix together in a large mixing bowl.
    2. Add the remaining ingredients. Beat until blended 2-3 minutes.
    3. Pour half of the mixture into each of the cake pans and bake for 30-35 minutes until done. Cool before frosting.

    5 tablespoons flour
    1 cup lowfat milk

    Wine Pairing with Black Bean Soup Recipe

    I’d recommend a nice Shiraz such as Watcher Shiraz from Fetish Wines.This Australian wine will be able to stand up to the bold flavors of the beans. The fruitiness this wine adds to the meal should pair well with the soup.

    Ingredients for Black Bean Soup Recipe:
    2 cups dried black beans
    6 cups water
    3 tablespoons canola oil
    4 ounces booked bacon, diced
    1 medium onion, diced
    1 large carrot, diced
    3 cloves garlic, minced
    1/2 red pepper, diced
    8 cups low sodium chicken broth
    4 bay leaves
    salt and pepper, to taste
    1/2 teaspoon Tabasco sauce
    1 Tablespoon dry sherry
    1 teaspoon red wine vinegar
    small amounts of diced green onions, diced red onions, and your favorite cheese for garnish
    (I usually use feta cheese and it’s yummy!)

    Instructions for Black Bean Soup Recipe:
    1. The evening before cooking you will need to look through the beans and discard any stones or debris. Rinse well and drain. Place beans in a large bowl. Cover them with water and soak overnight in the refrigerator. (It’s really important not to skip this part!)

    2. Brown bacon in a large cooking pot. Add onion, carrot, garlic, and red pepper. Saute vegetables for approximately 10 minutes until soft.

    3. Drain the beans. Pour beans and chicken broth into pot with the vegetables. Bring ingredients to a boil. Add the bay leaves and then reduce the heat to medium low. Simmer until the beans are tender; approximately 60 to 90 minutes.

    4. Remove pot from the heat. Stir in the salt, pepper, Tabasco, dry sherry, and red wine vinegar. Discard bay leaves. While beans are simmering, prepare the corn bread.

    5. Ladle soup into individual bowls. Top with garnishes and serve. For best results, serve when the corn bread is still hot from the oven!

    Corn Bread Recipe

    cornbreadIngredients for Corn Bread:
    1/2 cup sweet butter, melted.
    2/3 cup sugar
    2 large eggs
    1 cup buttermilk
    1/2 teaspoon baking soda
    1 cup cornmeal
    1 cup flour
    1/2 teaspoon salt

    Instructions for Corn Bread:
    1. Preheat oven to 375 degrees.
    2. Spray an 8 inch round pan with grease.
    3. Add sugar, melted butter, and eggs to a large mixing bowl. Mix until blended.
    4. Stir buttermilk and baking soda together in a small bowl. Add to mixing bowl.
    5. Add cornmeal, flour, and salt to the mixture. Stir until blended.
    6. Pour into baking pan.
    7. Bake for 30 to 40 minutes until done. A toothpick inserted in the center should come out clean when done.
    8. Cut into pie-shaped pieces. Butter the corn bread and serve while hot. Delicious!
