1 1/2 pounds of boneless chicken breasts
1 Tablespoon flour
1/2 teaspoon onion powder
2 cloves of garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 Tablespoons virgin olive oil
1 Tablespoon butter
1/4 cup dry white wine
1 Tablespoon lemon juice
1/2 cup reduced sodium chicken stock
1 Tablespoon capers

Instructions for Chicken Piccata: Recipe

1. Saute the minced garlic in oil in frying pan.
2. Mix together: flour, onion powder, salt, and pepper.
3. Coat chicken breast pieces with the flour mixture.
4. Add the chicken to the pan and simmer for 5 minutes. Turn chicken over.
5. Add butter, wine, lemon juice, chicken stock, and capers. Simmer until chicken is not pink inside and the sauce has thickened. (approximately 5 minutes).
6. Pour sauce over the chicken to serve.
7. Garnish with lemon slices, if desired.

Ingredients for Chocolate Mixture:
2 tablespoons whipping cream
1/4 cup semisweet chocolate chips
4 egg yolks
1/3 cup sugar
1/4 cup Tawny Port
1/8 teaspoon salt

Instructions for Chocolate Mixture:
1. Heat whipping cream and chocolate chips in a small saucepan until melted. Leave on a lightly warm burner to keep warm.
2. Mix together the egg yolks, sugar, Port, and salt. Cook in the top of a double boiler until the mixture becomes thick and creamy. This will take approximately 18 minutes.
3. Fold the chocolate into the egg mixture. Refrigerate until chilled.

6 ounces mascarpone cheese
2/3 cup whipping cream
1/2 cup sugar
2 1/2 cups warm strong coffee
32 ladyfinger cookies

Instructions for Tiramisu Dessert:
1. In a very large bowl, whisk together the mascarpone and 2 tablespoons of the whipping cream. Set aside.
2. In a medium bowl, beat the remainder of the whipping cream with 1/4 cup of the sugar. Beat until soft peaks form. Then fold into the mascarpone and chilled chocolate mixtures.
Cover and refrigerate until chilled.
3. Mix the warm coffee with the remaining sugar until blended. Dip 1 ladyfinger at a time very quickly into the coffee. Do not let the ladyfingers soak in the coffee or they will break.
4. Place the ladyfingers in a single layer on the bottom of a loaf pan (9 1/2 X 5 X 2 3/4 inches).
5. Spread 1/3 of the Tiramisu mixture evenly over the ladyfingers. Continue with 2 more layers. Top with a layer of ladyfingers. Refrigerate overnight before serving.

Ingredients for slow cooker chicken:
1 1/2 pounds red potatoes
1 1/2 pounds skinless chicken thighs
3 leeks cut into bite size pieces

1 10 ounce package frozen sweet corn
1/3 cup heavy cream

Cheers-2-Wine is pleased share our favorite Chicken Parmesan recipe. Everyone loves the hearty combination of chicken and cheese in this popular Italian dish. The flavors in this dish are hard to beat. After all, who doesn’t love a cheesy dish with mushrooms and garlic?
What makes this dish even better is that it is quick and easy to make.

Wine Pairing: Pinot Grigio would be an excellent dry white wine to pair with this dish. Use the same wine as you prepare the meal. Consider the Estate Grown Pinot Grigio from Avio Vineyards in Amador County. This Tuscan style wine has flavors of crisp green apples with a slightly sweet finish. It’s a lovely wine. If you can’t find Avio’s Pinot, Chateau Ste. Michelle makes a nice Pinot Gris that should be easy to find. Both would be excellent paired with this Italian dish.

Ingredients for this recipe:
4 skinless, boneless, cut into strips
3 eggs, beaten
1/2 – 3/4 cup freshly ground Parmesan cheese
freshly ground black pepper
1/2 cup dry white wine
4 tablespoons margarine
3 cloves garlic, minced
1/2 t. dried basil
10 oz. sliced mushrooms

Instructions for this recipe:
1. After rinsing and drying the chicken, season chicken with salt and pepper to taste. Spread Parmesan cheese onto a plate. Dip chicken in eggs, then coat with Parmesan cheese.
2.Melt margarine over medium high heat. Cook chicken until brown.
3. Reduce heat and add wine, garlic, mushrooms, basil, and oregano. Cover and simmer over low heat for 20 minutes.
4. Serve with pasta or rice. Enjoy!

This dish is great served over pasta along with a fresh green salad. Follow with your favorite dessert or a dish of gelato.

Cheers2Wine is pleased to share with you the best chicken cacciatore recipe. This is a hearty dish with two different types of mushrooms. It’s simmered in a rich tomato sauce. Serve with chocolate chip cheesecake for a delightful dinner (recipe below).

Ingredients for chicken cacciatore recipe:
3 1/2 pound chicken
3 Tablespoons extra virgin olive oil
6 ounces portobello mushroom caps
2 cloves garlic
10 ounces button mushrooms
1 cup dry red wine
1 cup low-sodium chicken broth
1 can of diced tomatoes
1 teaspoon oregano
1/4 teasponn hot red pepper flakes
3 bay leaves

Instructions for chicken cacciatore:
1. Preheat oven to 400 degrees.
2. Rinse chicken, cut into pieces, and dry with paper towels.
3. Heat oil in skillet and brown chicken.
4. Remove chicken and saute portobellos and onions until softened and golden brown. Then add garlic and stir for 2 minutes.
5. Add button mushrooms, wine, stock, diced tomatoes, oregano, pepper flakes, bay leaves, and salt. Bring to a boil.
6. Transfer mushroom mixture into a baking dish. Lay chicken among the mushrooms.
7. Cook uncovered for about 30 minutes in the oven. Remove bay leaves and serve.

Chocolate Chip Cheesecake

This chocolate chip cheesecake recipe is rich and delicious. A New York style cheesecake that is a real crowd pleaser.

This dessert is perfect for special events or an everyday treat. Garnish as desired for an elegant presentation.


1 1/2 cups graham cracker crumbs
1/3 cup sugar
1/3 cup unsweetened cocoa
1/3 cup melted butter
24 ounces cream cheese, room temperature
1 can sweetened condensed milk
3 eggs
2 teaspoons vanilla
1 1/2 cups semi-sweet chocolate chips


1. Preheat oven to 300 degrees.
2. In a medium bowl mix together the graham cracker crumbs, sugar, and cocoa.
3. Press this mixture firmly onto the sides and bottom of a 9 inch springfoam pan.
4. Beat cream cheese until smooth. Add milk and mix well. Add eggs and vanilla and beat until smooth. Stir in 1/2 cup of the chips. Pour cheese mixture into the crust. Top with 1 cup of the chocolate chips.
5. Bake for 1 hour. Turn the oven off Leave the cake in the oven to cool off gradually for another 90 minutes. Remove from oven and refrigerate.
6. Refrigerate until ready to serve. Remove outer ring of the pan before serving.

This cheesecake will delight cheesecake lovers with it’s rich, creamy texture. I usually serve 8 people with this dessert. It will be the perfect dessert to serve with this chicken cacciatore recipe.
