1 1/2 pounds of boneless chicken breasts

1/2 teaspoon onion powder
2 cloves of garlic, minced

1/4 cup dry white wine
1 Tablespoon lemon juice

1. Saute the minced garlic in oil in frying pan.
2. Mix together: flour, onion powder, salt, and pepper.
3. Coat chicken breast pieces with the flour mixture.
4. Add the chicken to the pan and simmer for 5 minutes. Turn chicken over.
5. Add butter, wine, lemon juice, chicken stock, and capers. Simmer until chicken is not pink inside and the sauce has thickened. (approximately 5 minutes).

3. Fold the chocolate into the egg mixture. Refrigerate until chilled.

6 ounces mascarpone cheese
2/3 cup whipping cream
1/2 cup sugar
2 1/2 cups warm strong coffee
32 ladyfinger cookies

Instructions for Tiramisu Dessert:
1. In a very large bowl, whisk together the mascarpone and 2 tablespoons of the whipping cream. Set aside.
2. In a medium bowl, beat the remainder of the whipping cream with 1/4 cup of the sugar. Beat until soft peaks form. Then fold into the mascarpone and chilled chocolate mixtures.
Cover and refrigerate until chilled.
3. Mix the warm coffee with the remaining sugar until blended. Dip 1 ladyfinger at a time very quickly into the coffee. Do not let the ladyfingers soak in the coffee or they will break.
4. Place the ladyfingers in a single layer on the bottom of a loaf pan (9 1/2 X 5 X 2 3/4 inches).
5. Spread 1/3 of the Tiramisu mixture evenly over the ladyfingers. Continue with 2 more layers. Top with a layer of ladyfingers. Refrigerate overnight before serving.

Ingredients for Chicken in Red Wine Sauce

1/2 cup frozen pearl onions
4 boneless, skinless chicken breasts
2 Tablespoons flour
3 slices bacon
8 oz. package of fresh button mushrooms, sliced
3/4 cup Pinot Noir
1/2 cup chicken broth
2 Tablespoons tomato paste
3/4 teaspoon thyme
1/4 teaspoon freshly ground pepper
sea salt, to taste

Instructions for Chicken in Red Wine Sauce

1. Sprinkle both sides of the chicken breasts with flour.
2. Microwave the pearl onions and 2 Tablespoons of water for 3 minutes. Drain.
3. Meanwhile, fry bacon in a large skillet until crisp. Drain, crumble, and set aside.
4. Place chicken breasts in the same skillet. Cook for 3 minutes on both sides to brown the outside of the breasts. Set aside.
5. Add onions and mushrooms to the skillet and cook for approximately 5 minutes to soften. Add crumbled bacon, Pinot Noir wine, chicken broth, tomato paste, thyme, freshly ground pepper, and sea salt. Stir to combine all ingredients. Bring to a boil. Simmer for approximately 5 minutes until sauce reaches the desired thickness.
6. Add chicken breasts to the skillet. Simmer. Adjust seasonings. Serve over garlic mashed potatoes or your favorite pasta.

1 sour dough loaf of bread, sliced lengthwise
1/2 cup soften butter
3/4 cup light mayonaise
3 green onions, sliced
4 cloves garlic, sliced
1 cup fresh Parmesan cheese, grated
1 cup Monterey Jack cheese, grated
Salad Supreme (purchase in the Spices section), optional

Instructions for Garlic Bread
1. Preheat oven to 350 degrees.
2. Combine all ingredients in a bowl.
3. Spread onto both halves of the bread loaf.
4. Set the halves on top of each other. Slice. If desired, sprinkle lightly with Salad Supreme.
5. Wrap loaf in aluminum foil. Bake in oven until nice and hot. Approximately 10 minutes.

8 slices bacon (chopped into 1/2 pieces)
2 tablespoons olive oil
2 1/2 – 3 lbs. of chicken (legs and thighs)
3/4 teaspoon salt (plus additional for seasoning)
1/4 teaspoon pepper (plus additional for seasoning)
1 pound bag frozen pearl onions (thawed)
1 pound mushrooms (cut in half)
3 large russet potatoes, peeled and cut crosswise into thirds
3 large carrots, cut into 2 inch pieces
1/3 cup flour
4 sprigs fresh thyme
2 bay leaves
2 1/2 cups of dry red wine
2 cups chicken broth
1/2 cup fresh Italian parsley (chopped)
3 tablespoons red wine vinegar

Instructions for this Coq au Vin Recipe:
1. Use a large Dutch oven to cook the bacon in oil until crisp. Remove bacon from pan and set aside.
2. Season the chicken with salt and paper and brown in the bacon drippings. Remove chicken from pan and set aside.
3. Add onions, garlic, and mushrooms to pan. Cook until brown.
4. Stir in the potatoes, carrots, salt, and flour.
5. Add wine and chicken broth. Stir. Make sure there are no lumps of flour.
6. Add chicken, thyme, bay leaves, and half of the bacon. Bring to a boil. Reduce heat, cover, and simmer 40 minutes.
7. Uncover and simmer until the sauce thickens, which will be about 10 more minutes.
8. Stir in parsley and wine vinegar.
9. Taste and add more salt and pepper if necessary.

Chocolate Covered StrawberriesChocolate covered strawberries are always a special treat. Use your favorite chocolate to make this easy yet decadent dessert.

Ingredients for chocolate covered strawberries:
2 pounds strawberries
12 ounces of your favorite chocolate
(semisweet, milk, dark)
6 ounces white chocolate (optional)

Instructions for chocolate covered strawberries:
1. Strawberries need to be at room temperature. Wash and dry strawberries. It is important that strawberries are totally dry.

2. Line a cookie sheet with waxed paper.

3. Melt chocolate in the top of a double boiler or in the microwave.

4. Hold onto stem of a strawberry. Dip strawberry into the melted chocolate. Swirl to coat all sides of the strawberry. Hold strawberry above melted chocolate. Swirl and shake to remove excess chocolate.

5. Lay strawberry on the waxed paper. Repeat with all of the strawberries.

6. If desired – Melt white chocolate in the top of a double boiler or in the microwave. Dip a fork into the melted white chocolate. Swirl onto the chocolate strawberries to make a swirly design on both sides of each strawberry.

7. Keep strawberries at room temperature. They should be served within 8 hours. Store any leftovers in the refrigerator. Leftovers can be eaten the next day, but the chocolate will start to separate from the strawberries after being cooled.
