This chicken piccata recipe is a favorite Italian dish. It creates an elegant menu that is simple to make. Serve with fresh grilled vegetables, garlic bread, and mashed potatoes for a flavorful meal.

Wine Pairing: You definitely want a dry white wine to complement the dry flavors of the meal. An exquisite pairing would the Dry Creek Vineyards Taylor’s Vineyard Musque. This single vineyard Sauvignon Blanc is a beautifully dry wine with complex tropical fruit flavors. Another great choice would be Astrolabe Province Sauvignon Blanc from Marlborough, New Zealand. This is a medium-bodied wine with white peach, gooseberry and citrus flavors.

Ingredients for Chicken Piccata Recipe:

1 1/2 pounds of boneless chicken breasts
1 Tablespoon flour
1/2 teaspoon onion powder
2 cloves of garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 Tablespoons virgin olive oil
1 Tablespoon butter
1/4 cup dry white wine
1 Tablespoon lemon juice
1/2 cup reduced sodium chicken stock
1 Tablespoon capers

Instructions for Chicken Piccata: Recipe

1. Saute the minced garlic in oil in frying pan.
2. Mix together: flour, onion powder, salt, and pepper.
3. Coat chicken breast pieces with the flour mixture.
4. Add the chicken to the pan and simmer for 5 minutes. Turn chicken over.
5. Add butter, wine, lemon juice, chicken stock, and capers. Simmer until chicken is not pink inside and the sauce has thickened. (approximately 5 minutes).
6. Pour sauce over the chicken to serve.
7. Garnish with lemon slices, if desired.

tiramisuAfter this delightful meal, treat yourself to the best Tiramisu This classic Italian dessert will quickly disappear. This recipe requires no baking and is best when prepared the day before you serve it.

Ingredients for Chocolate Mixture:
2 tablespoons whipping cream
1/4 cup semisweet chocolate chips
4 egg yolks
1/3 cup sugar
1/4 cup Tawny Port
1/8 teaspoon salt

Instructions for Chocolate Mixture:
1. Heat whipping cream and chocolate chips in a small saucepan until melted. Leave on a lightly warm burner to keep warm.
2. Mix together the egg yolks, sugar, Port, and salt. Cook in the top of a double boiler until the mixture becomes thick and creamy. This will take approximately 18 minutes.
3. Fold the chocolate into the egg mixture. Refrigerate until chilled.

Ingredients for the best Tiramisu Recipe:
6 ounces mascarpone cheese
2/3 cup whipping cream
1/2 cup sugar
2 1/2 cups warm strong coffee
32 ladyfinger cookies

Instructions for Tiramisu Dessert:
1. In a very large bowl, whisk together the mascarpone and 2 tablespoons of the whipping cream. Set aside.
2. In a medium bowl, beat the remainder of the whipping cream with 1/4 cup of the sugar. Beat until soft peaks form. Then fold into the mascarpone and chilled chocolate mixtures.
Cover and refrigerate until chilled.
3. Mix the warm coffee with the remaining sugar until blended. Dip 1 ladyfinger at a time very quickly into the coffee. Do not let the ladyfingers soak in the coffee or they will break.
4. Place the ladyfingers in a single layer on the bottom of a loaf pan (9 1/2 X 5 X 2 3/4 inches).
5. Spread 1/3 of the Tiramisu mixture evenly over the ladyfingers. Continue with 2 more layers. Top with a layer of ladyfingers. Refrigerate overnight before serving.

    Coq au Vin Recipe & Chocolate Covered Strawberries

    coq au vin recipeCheers2Wine is pleased to recommend this Coq au Vin Recipe. Indulge with chocolate covered strawberries for dessert. This classic Italian dish tastes great! This hearty dish is comfort food at its best!

    Wine Pairing:You need a hearty red wine such as a Chianti or Barbera to pair with Coq au Vin.

     

    Ingredients for this Coq au Vin Recipe:
    8 slices bacon (chopped into 1/2 pieces)
    2 tablespoons olive oil
    2 1/2 – 3 lbs. of chicken (legs and thighs)
    3/4 teaspoon salt (plus additional for seasoning)
    1/4 teaspoon pepper (plus additional for seasoning)
    1 pound bag frozen pearl onions (thawed)
    1 pound mushrooms (cut in half)
    3 large russet potatoes, peeled and cut crosswise into thirds
    3 large carrots, cut into 2 inch pieces
    1/3 cup flour
    4 sprigs fresh thyme
    2 bay leaves
    2 1/2 cups of dry red wine
    2 cups chicken broth
    1/2 cup fresh Italian parsley (chopped)
    3 tablespoons red wine vinegar

    Instructions for this Coq au Vin Recipe:
    1. Use a large Dutch oven to cook the bacon in oil until crisp. Remove bacon from pan and set aside.
    2. Season the chicken with salt and paper and brown in the bacon drippings. Remove chicken from pan and set aside.
    3. Add onions, garlic, and mushrooms to pan. Cook until brown.
    4. Stir in the potatoes, carrots, salt, and flour.
    5. Add wine and chicken broth. Stir. Make sure there are no lumps of flour.
    6. Add chicken, thyme, bay leaves, and half of the bacon. Bring to a boil. Reduce heat, cover, and simmer 40 minutes.
    7. Uncover and simmer until the sauce thickens, which will be about 10 more minutes.
    8. Stir in parsley and wine vinegar.
    9. Taste and add more salt and pepper if necessary.
    10. Top with bacon and serve.

     


    How to Make Chocolate Covered Strawberries

    Chocolate Covered StrawberriesChocolate covered strawberries are always a special treat. Use your favorite chocolate to make this easy yet decadent dessert.

    Ingredients for chocolate covered strawberries:
    2 pounds strawberries
    12 ounces of your favorite chocolate
    (semisweet, milk, dark)
    6 ounces white chocolate (optional)

    Instructions for chocolate covered strawberries:
    1. Strawberries need to be at room temperature. Wash and dry strawberries. It is important that strawberries are totally dry.

    2. Line a cookie sheet with waxed paper.

    3. Melt chocolate in the top of a double boiler or in the microwave.

    4. Hold onto stem of a strawberry. Dip strawberry into the melted chocolate. Swirl to coat all sides of the strawberry. Hold strawberry above melted chocolate. Swirl and shake to remove excess chocolate.

    5. Lay strawberry on the waxed paper. Repeat with all of the strawberries.

    6. If desired – Melt white chocolate in the top of a double boiler or in the microwave. Dip a fork into the melted white chocolate. Swirl onto the chocolate strawberries to make a swirly design on both sides of each strawberry.

    7. Keep strawberries at room temperature. They should be served within 8 hours. Store any leftovers in the refrigerator. Leftovers can be eaten the next day, but the chocolate will start to separate from the strawberries after being cooled.

    Fishermen’s Cioppino

    Best Cioppino RecipeThis cioppino recipe is a classic dish that is easy to make. A rich fish flavored hearty dish! It is wonderful served with warm sour dough bread and a glass of wine.

    Wine Pairing: My favorite wine to serve with this dish is a Sangiovese. Select your favorite. Consider a Sangiovese from Vino Noceto. This is a small winery located near the Sierra Foothill town of Plymouth in Amador County. Vino Noceto specializes in Sangiovese. Any of their wines would be delightful.

     
    Ingredients for Cioppino Recipe:
    1/4 cup olive oil
    1 large onion, chopped
    2 cloves garlic, minced
    1 large green bell pepper,seeded and chopped
    2/3 cup chopped parsley
    1 can (15 oz) tomato sauce
    1 can (28 oz) tomatoes
    1 cup dry red wine
    1 bay leaf
    1 tsp dry basil
    1/2 tsp dry oregano leaves
    12 clams in shell, suitable for steaming, scrubbed
    1 lb large shrimp, (30 per lb), shelled & deveined
    2 cooked large Dungeness crab (about 2 lbs each), cleaned and cracked

    Instructions for Cioppino Recipe:

    1. Use a 6-8 quart pan to simmer the oil, onion, garlic, bell pepper and parsley. Simmer until onion is soft.
    2. Stir in tomato sauce and the tomatoes (along with liquid). Use a spoon to break up the tomatoes.
    3. Add wine, bay leaf, basil, and oregano.
    4. Cover and simmer for 20 minutes.
    5. Add clams, shrimp and crab. Cover and simmer slowly until clams pop open. Shrimp should turn pink. This takes about 20 minutes.
    6. Serve with warm sour dough bread.

    Chocolate Cream Pie

    Chocolate Cream Pie

    This chocolate cream pie is a family favorite. My mother made this pie every holiday. These pies have always been greatly anticipated. They were quickly devoured by her children and grandchildren. You’ll love this chocolate meringue pie for dessert with this Cioppino recipe!

    Ingredients for Crust:
    3 cups graham cracker crumbs
    1 cup finely chopped walnuts
    1/2 cup melted butter

    Directions for Crust:
    1. Preheat oven to 350 degrees.
    2. Combine ingredients, mixing well. Spray 2 pie pans with cooking spray. Press mixture into the bottom and sides of 2 9 inch pie pans.
    3. Bake until lightly brown for approximately 15 minutes. Cool.

    Ingredients for Filling:
    1 1/2 cups sugar
    2/3 cup flour
    1/2 cup cocoa
    1 Tablespoon cornstarch
    2 eggs
    3 teaspoons vanilla
    4 cups milk

    Directions for Filling:
    1. Stir dry ingredients together in a medium pan. Mix in the eggs. Stir in the milk gradually.
    2. Cook over medium heat until thick. Let it boil for 2-3 minutes, stirring constantly. Add vanilla.
    3. Pour into pie crusts. Cover with foil or plastic wrap to keep it warm.
    4. Reduce the temperature of the oven to 325 degrees.

    Ingredients for Meringue:
    8 egg whites
    1/2 teaspoon cream of tartar
    1/2 teaspoon salt
    1 cup sugar
    2 teaspoons vanilla

    1. Beat egg whites, cream of tartar, and salt in a large bowl until foamy. Gradually add in the sugar. Continue beating until stiff peaks are forming.
    2. Add vanilla.
    3. Spread mixture over the pie filling. Make sure that the meringue seals along the edge of the crust.
    4. Bake for approximately 25 minutes. Cool for an hour at room temperature. Move into the refrigerator to chill for at least 3 hours before serving.

    This recipe makes two pies. One chocolate cream pie will NOT be enough!
    It also calls for a graham cracker crust. However, you can use any type of crust you prefer. The creamy cool chocolate tastes great after a serving of this Cioppino recipe. Enjoy!
